  • 2 medium zucchinis, grated
  • 1 teaspoon salt for drawing out moisture from the zucchinis
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 2 green onions chopped
  • 1 large egg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Oil for frying enough to cover the skillet

Preparation

  • Grate the zucchinis and place them in a bowl. Sprinkle with salt and let them sit for 10 minutes. After that, squeeze out the excess moisture.
  • In a separate bowl, mix together the flour, Parmesan cheese, green onions, egg, black pepper, and garlic powder.
  • Stir in the grated zucchini until it is well combined.

Cooking

  • Heat oil in a skillet over medium heat.
  • Drop spoonfuls of the zucchini mixture into the skillet and flatten them slightly.
  • Cook for about 3-4 minutes on each side until they are golden and crispy.
  • Remove the fritters from the skillet and drain them on paper towels.

Serving

  • Serve hot or warm with your favorite dipping sauce, such as yogurt, sour cream, or spicy salsa.

Notes

Make sure to squeeze out as much moisture from the zucchini as possible for crispier fritters. You can also customize by adding other herbs and spices such as thyme or dill. For a gluten-free option, try almond flour or a gluten-free flour blend.
