  • 2 medium zucchini, grated
  • 1/2 teaspoon salt
  • 1/4 cup finely chopped scallions
  • 1/4 cup fresh dill or mint, chopped
  • 1/3 cup crumbled feta cheese
  • 1 egg, lightly beaten
  • 1/2 cup all-purpose flour (or chickpea flour for a gluten-free option)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for frying

  • Greek yogurt or tzatziki, for serving Optional

Preparation

  • Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes.
  • After 10 minutes, squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth.
  • In a large bowl, mix the zucchini with scallions, dill or mint, feta cheese, egg, flour, baking powder, and black pepper until combined.

Cooking

  • Heat a few tablespoons of olive oil in a skillet over medium heat.
  • Scoop tablespoon-sized portions of the mixture into the pan, flattening them slightly.
  • Cook for 3–4 minutes per side until they are golden brown and crisp.
  • Transfer the fritters to a paper towel-lined plate to drain any excess oil.

Serving

  • Serve warm with a dollop of Greek yogurt or tzatziki if desired.

Notes

Make sure to squeeze out as much moisture from the zucchini as possible for crispiness. Feel free to mix in other vegetables, experiment with herbs, or use different types of cheese.
