Preparation

  • Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or spray.
  • Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  • In a mixing bowl, combine the grated zucchini, chopped onion, and cheese.
  • In another bowl, whisk together the eggs, olive oil (or melted butter), salt, and pepper until well combined.
  • Gradually fold the wet mixture into the zucchini mixture.
  • Add the flour and baking powder, stirring gently until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top. Optionally, sprinkle extra cheese on top.

Baking

  • Bake for about 45-55 minutes or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Keep an eye on the bread as it bakes; if the top browns too quickly, tent it with foil. For best results, use quality, fresh ingredients.
