  • 8 ounces mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add the minced garlic and sauté for 1 minute until fragrant.
  • Add the sliced mushrooms and cook for about 5 minutes, stirring occasionally, until they begin to soften.
  • Add the sliced zucchini to the skillet, season with salt and pepper, and cook for another 5-7 minutes until the zucchini is tender.
  • Remove from heat and garnish with fresh parsley before serving.

Notes

Leftover Zucchini and Mushrooms can be stored in an airtight container in the fridge for 3-4 days. To reheat, simply warm them in a skillet over medium heat. If you want to freeze, allow the dish to cool completely, then transfer it to a freezer-safe bag or container. It can be stored in the freezer for up to 3 months. Thaw in the fridge before reheating.
