Ingredients
  

Fruits

  • 4 cups watermelon, cubed into 2.5 cm pieces Use ripe, sweet watermelon
  • 1.5 cups strawberries, sliced
  • 1.5 cups raspberries
  • 1.5 cups cherries, pitted and halved

Dressing

  • 2 tablespoons freshly squeezed lime juice
  • 1.5 teaspoons lime zest
  • 2 tablespoons agave syrup Can substitute with honey or maple syrup
  • 1 tablespoon fresh mint, finely chopped Use extra for garnish

Instructions
 

Preparation

  • In a small mixing bowl, whisk together agave syrup, lime juice, lime zest, and finely chopped mint until thoroughly blended.
  • Cube the watermelon and slice the strawberries.
  • Combine the watermelon, strawberries, raspberries, and cherries in a large salad bowl.
  • Drizzle the lime mint dressing over the fruit and gently toss to evenly coat.
  • Garnish with extra torn mint leaves just before serving.

Notes

Store in an airtight container in the refrigerator and consume within 2 days for maximum flavor and texture. Avoid freezing.
