  • 4 cups fresh seedless watermelon, chopped Make sure to remove any seeds.

  • 1 cup granulated sugar Preferably white sugar, but alternatives may be used.
  • 1 packet pectin Use quick-set pectin for optimal results.

Preparation

  • Chop 4 cups of seedless watermelon into small pieces and blend in a food processor until smooth.
  • Strain the blended watermelon through a mesh sieve or cheesecloth into a large pot to separate juice from pulp.

Cooking

  • Add 1/4 cup fresh lime juice, 1 cup granulated sugar, and 1 packet of pectin to the pot of watermelon juice. Stir well.
  • Bring the mixture to a rolling boil over medium-high heat, stirring constantly for 1-2 minutes.
  • Check the jelly’s consistency by pouring a small amount onto a cold plate; it should hold its shape.

Jarring and Storing

  • Pour the hot jelly into sterilized jars, leaving about 1/4 inch of headspace. Clean the rim before sealing with lids.
  • Process jars in a hot water bath for about 5-10 minutes.
  • Let jars cool completely before storing in a cool, dark place and let flavor meld for at least 24 hours.

Notes

For extra flavor, consider adding a hint of mint or basil during cooking. Proper sterilization of jars is key for food safety.
