Main Ingredients

  • 4 cups Fresh watermelon, cubed Ripe for sweetness
  • 1 cup Feta cheese, crumbled Creamy and tangy kick
  • 2 cups Tortellini Fresh or frozen, cheese or herb-filled
  • 1 cup Fresh mint, chopped For burst of freshness
  • 2 tablespoons Lemon juice To enhance flavors
  • 2 tablespoons Olive oil For richness and depth
  • to taste Salt and pepper

Preparation

  • In a large pot of salted boiling water, cook the tortellini according to package instructions, usually around 3–5 minutes for fresh and longer for frozen. Drain and rinse under cold water to stop the cooking process.
  • While the tortellini cooks, cut the watermelon into bite-sized cubes and set them aside.

Mixing

  • In a large mixing bowl, combine the cooked tortellini, watermelon, and crumbled feta.
  • Chop the fresh mint and add it to the bowl, saving a bit to sprinkle on top for presentation.

Dressing and Tossing

  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Adjust seasoning to taste and pour it over the salad ingredients.
  • Gently toss all ingredients until evenly coated. Garnish with additional mint leaves and enjoy.

Notes

Let the salad sit for about 10 minutes before serving to allow flavors to meld. For extra crunch, add toasted pine nuts or seeds.
