  • 4 cups seedless watermelon, cubed Choose a ripe watermelon for the best flavor.
  • 1/2 cup crumbled feta cheese Use good quality feta for richer flavor.
  • 1/4 cup fresh mint leaves, torn Use fresh mint for optimal taste.

Dressing and Seasoning

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • freshly cracked black pepper, to taste
  • Optional: a sprinkle of flaky sea salt or balsamic glaze Optional for added flavor.

Preparation

  • In a large bowl, gently toss together the watermelon cubes, crumbled feta, and torn mint leaves.
  • Drizzle the salad with olive oil and lime juice.
  • Add freshly cracked black pepper to taste.
  • Toss lightly to combine all ingredients without breaking the watermelon pieces.
  • Serve immediately, and if desired, garnish with a sprinkle of flaky sea salt or a drizzle of balsamic glaze.

Notes

Serve the salad right after making it to enjoy the freshness of the ingredients. If you have leftovers, store them in the refrigerator using an airtight container, but it’s best enjoyed right away.
