Ingredients
  

Main Ingredients

  • 1 lb ground beef Can be substituted with ground turkey or shredded rotisserie chicken.
  • 1 packet taco seasoning Store-bought is recommended for best flavor.
  • 1 can black beans, drained and rinsed Optional, can substitute with refried beans.
  • 3 cups shredded cheese Use a mix of cheeses for more flavor.
  • 2 cups Fritos or similar corn chips Add last 10-15 minutes of baking to maintain crunch.
  • 1 Optional toppings Shredded lettuce, diced tomatoes, and sour cream.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Brown the ground beef in a skillet over medium heat.
  • Stir in the taco seasoning and cook according to package instructions.
  • In a casserole dish, layer the cooked beef, black beans, and half of the cheese.
  • Top with a layer of Fritos.
  • Add the remaining cheese on top of the Fritos.

Baking

  • Cover the casserole dish with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serving

  • Serve hot with optional toppings like shredded lettuce, diced tomatoes, and sour cream.

Notes

This casserole can be prepared a day in advance. Just keep the chips separate until baking to avoid sogginess.
