- Heat olive oil in a large skillet or wok over medium-high heat.
- Add ground beef and cook, breaking it up, until browned. Drain excess fat.
- Add onion and bell peppers. Cook 5–7 minutes until softened.
- Stir in garlic and cook for 1 more minute.
- Stir in cucumber, tomatoes, oregano, basil, red pepper flakes (if using), salt, and pepper.
- Cook for another 3–5 minutes until veggies are tender-crisp.
- Remove from heat and stir in fresh parsley.
- Serve hot, with lemon wedges on the side if desired.
Notes
This dish pairs well with a side of steamed rice or quinoa. For added flavor, drizzle with soy sauce or a peanut sauce.
