Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the grated zucchini, cheddar cheese, and chopped vegetables.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and garlic powder.
- In a mixing bowl, beat the eggs and oil together.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the zucchini and cheese mixture until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
To store, keep in an airtight container in the fridge for about a week. For longer storage, freeze wrapped tightly in plastic wrap.
