  • 1/2 cup chopped bell peppers
Dry Ingredients
  • 1 cup all-purpose flour You can substitute half with whole wheat flour for a lighter texture.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder
Wet Ingredients
  • 1/2 cup vegetable oil
  • 2 large eggs

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the grated zucchini, cheddar cheese, and chopped vegetables.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and garlic powder.
  4. In a mixing bowl, beat the eggs and oil together.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the zucchini and cheese mixture until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Let cool before slicing.

Notes

To store, keep in an airtight container in the fridge for about a week. For longer storage, freeze wrapped tightly in plastic wrap.
