Ingredients
  

For the dough

  • 1/2 cup vegan butter Grate and freeze for at least 30 minutes.
  • 2/3 cup vegan butter Cut into cubes.
  • 2 cups all-purpose flour
  • 1/2 cup ice cold water Ensure it's ice cold for the best results.

Preparation

  • Grate 1/2 cup of the vegan butter and put it in the freezer for at least 30 minutes.
  • Cut the remaining 2/3 cup of vegan butter into cubes.
  • Add the flour and butter cubes to a food processor and pulse several times until you get a rough pebble-like texture.
  • Alternatively, mix in a bowl using your fingers to break the butter into small pieces.
  • Add in the ice-cold water and pulse a few more times until the mixture comes together when squeezed.
  • Turn the dough onto a floured surface and quickly shape it into a rectangle.
  • Roll it into a rectangle measuring roughly 8" x 12".
  • Spread the frozen butter shreds in an even layer across the dough, working quickly.
  • Fold the right side of the dough 2/3 of the way towards the left.
  • Fold the left side over the top of the right and turn the dough 90 degrees to the right.
  • Roll out the dough again and repeat the folding process as needed to achieve flaky layers.

Notes

For best results, ensure all ingredients are cold. Don't rush the resting time; let the dough chill between folds to maintain structure. Experiment with different filling options for variety.
