For Grilling

  • 3-4 cups Vegetables (bell peppers, zucchini, mushrooms, asparagus) Choose your favorites or seasonal veggies

Preparation

  • Wash and cut your vegetables into uniform pieces to ensure even cooking.
  • In a mixing bowl, whisk together the olive oil, balsamic vinegar, minced garlic, fresh herbs, salt, and pepper until fully combined.
  • Toss your chopped vegetables into the marinade, ensuring everything is well-coated. Alternatively, use a resealable plastic bag for marinating.

Grilling

  • Preheat your grill to medium-high heat. If using skewers, soak them in water for about 30 minutes to prevent burning.
  • Place the marinated veggies directly on the grill grates or on skewers. Grill for about 8-10 minutes, flipping halfway through.
  • Once beautifully grilled with char marks and a slightly tender texture, remove from heat.

Serving

  • Garnish with fresh herbs or a drizzle of balsamic reduction before serving.

Notes

For added zing, a splash of lemon juice can brighten up the marinade. Ensure grill is preheated for the best char and texture.
