Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef, bread crumbs, ketchup, mustard, diced onion, diced pickles, garlic powder, onion powder, salt, and pepper. Mix everything until well combined.
- Press half of the meat mixture into the bottom of a loaf pan.
- Layer the shredded cheddar cheese and cooked bacon on top of the meat mixture.
- Cover with the remaining meat mixture and press it down to seal the edges.
Cooking
- Bake in the preheated oven for 45-50 minutes or until fully cooked.
- Remove from the oven and brush the top with BBQ sauce.
- Return to the oven for an additional 5 minutes.
- Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
Make sure not to overmix the meat mixture to avoid toughness. You can add more spices or hot sauce for extra flavor, and for a sweeter glaze, mix brown sugar into the BBQ sauce. Swap cheddar for your favorite cheese or add jalapeños or mushrooms as variations.
