Ingredients
  

Cookie Dough Ingredients

  • 1 cup unsalted butter, softened Make sure this is at room temperature.
  • 1/2 cup cream cheese, softened Also at room temperature for easy mixing.
  • 1 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Caramel Filling

  • 40 pieces Kraft caramel cubes, unwrapped
  • 2 tablespoons heavy cream For melting with caramel.

Chocolate Ganache

  • 1 cup milk chocolate chips
  • 1/4 cup heavy cream To heat for the ganache.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, cream cheese, and sugar until smooth.
  • Beat in the egg and vanilla extract.
  • In another bowl, combine the flour, salt, and baking soda. Gradually add the dry ingredients to the wet mixture until well combined.
  • Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.

Baking

  • Bake for 10-12 minutes or until lightly golden. Let cool.

Making Caramel and Ganache

  • For the caramel, melt the unwrapped caramel cubes with 2 tablespoons of heavy cream in a saucepan over low heat, stirring until smooth.
  • For the chocolate ganache, heat 1/4 cup heavy cream in a saucepan until just simmering, then pour over the chocolate chips in a bowl. Stir until melted and smooth.

Assembly

  • Once cookies are cool, top each with a drizzle of caramel and then drizzle with the chocolate ganache.

Notes

Best enjoyed fresh, but cookies also taste great the next day. Consider a sprinkle of sea salt on top of the caramel for added contrast.
