Ingredients
  

For the Turkey Stir-Fry

  • 1 pound ground turkey A lean meat option high in protein.
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots) Feel free to use fresh or frozen.
  • 2 tablespoons soy sauce Adds umami flavor.
  • 1 tablespoon olive oil For sautéing.
  • 1 clove garlic, minced Adds fragrance and flavor.

For the Mashed Cauliflower

  • 1 head cauliflower, chopped A healthy alternative to potatoes.
  • 1/4 cup milk For creaminess in mashed cauliflower.
  • to taste Salt and pepper Seasoning to taste.

Instructions
 

Preparation

  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  • Add ground turkey to the skillet, cooking until browned.
  • Stir in mixed vegetables and soy sauce, cooking until vegetables are tender.
  • Meanwhile, steam or boil chopped cauliflower until soft. Drain and mash with milk, salt, and pepper.
  • Serve the turkey stir-fry over the mashed cauliflower.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat on low heat for best texture. Sprinkle fresh herbs or green onions on top for serving.
