- In a bowl, mix the shredded turkey, stuffing mix, and turkey gravy until well combined.
- Roll out the puff pastry sheets or biscuit dough on a floured surface and cut them into squares.
- Place a spoonful of the turkey and stuffing mixture in the center of each square.
- Fold the pastry over the filling and seal the edges tightly.
- Brush the tops with olive oil and sprinkle with salt, pepper, and cheese if using.
- Place the bundles on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
