Ingredients
  

Crust
  • 2 cups crushed graham crackers
  • 6 tablespoons melted butter
Cheesecake Filling
  • 16 ounces cream cheese, softened Ensure cream cheese is at room temperature.
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 2 cups mixed berries (fresh or frozen) Thaw and drain frozen berries beforehand.
  • 1 teaspoon cornstarch (optional) For thickening mixed berries.

Method
 

Preparation
  1. Line the bottom of a 9-inch springform pan with parchment paper.
  2. Mix crushed graham crackers with melted butter until sandy. Press into the pan until firm and chill for 15 minutes.
  3. Beat cream cheese and sugar until smooth. Divide into two bowls, leaving one plain for the vanilla layer.
  4. Blend half of the berries with lemon juice and fold into the second bowl for the berry layer.
  5. Spread the vanilla layer over the crust and chill for 20 minutes.
  6. Add the berry layer and chill again.
  7. Warm remaining berries with a teaspoon of sugar and optional cornstarch until they burst and thicken. Let cool completely, then spoon over the cheesecake.
  8. Chill for at least 4 hours or overnight.
  9. Slice with a warm knife and serve chilled.

Notes

For a beautiful presentation, serve with a dollop of whipped cream and a sprinkle of fresh mint. Pair with a light summer salad or drizzle chocolate sauce for an indulgent twist. Store tightly covered in the refrigerator for up to five days or freeze slices in an airtight container for up to a month.
