Preparation
- Line the bottom of a 9-inch springform pan with parchment paper.
- Mix crushed graham crackers with melted butter until sandy. Press into the pan until firm and chill for 15 minutes.
Cheesecake Layers
- Beat cream cheese and sugar until smooth. Divide into two bowls, leaving one plain for the vanilla layer.
- Blend half of the berries with lemon juice and fold into the second bowl for the berry layer.
- Spread the vanilla layer over the crust and chill for 20 minutes.
- Add the berry layer and chill again.
- Warm remaining berries with a teaspoon of sugar and optional cornstarch until they burst and thicken. Let cool completely, then spoon over the cheesecake.
- Chill for at least 4 hours or overnight.
Serving
- Slice with a warm knife and serve chilled.
Notes
For garnish, serve with whipped cream and fresh mint or drizzle some chocolate sauce over the top.
