Ingredients
  

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt

Wet Ingredients

  • 1/2 cup softened butter
  • 1 cup grated coconut
  • 1/4 cup mixed dried fruits (optional)
  • 1 tsp vanilla extract
  • 1 cup milk
  • 1 egg, beaten

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and prepare a greased bread pan.
  • In a bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  • Work the softened butter into the dry mixture until crumbly.
  • Stir in grated coconut and dried fruits.
  • In another bowl, mix vanilla extract, milk, and beaten egg.
  • Fold the wet mixture into the dry ingredients until just combined.
  • Transfer to the bread pan and bake for about 1 hour or until a toothpick comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a rack to cool completely.

Notes

Serve warm or at room temperature. Goes wonderfully with tea or coffee. Can be stored tightly wrapped for up to 3 days or frozen for a month.
