  • 1.5 pounds 1 1/2 pounds tomatoes (vine-ripe, roma, or heirloom), cored and quartered — Roma is preferred for its texture Use ripe tomatoes for the best flavor.
  • 0.5 medium 1/2 medium yellow onion, roughly chopped
  • 1 each 1 green onion, ends trimmed
  • 2-3 cloves 2-3 cloves of garlic, finely chopped
  • 2 each 2 jalapeños (with seeds if you like heat!), diced Adjust the heat level by removing seeds.
  • 0.5 cup 1 heaping handful of cilantro (about 1/2 cup) Fresh cilantro enhances the flavor.
  • 0.5 each Half a lime, juiced Fresh lime juice adds brightness.
  • 1 pinch Pinch of cumin Adds a warm flavor.
  • 1 pinch Pinch of sugar Balances acidity.
  • to taste Salt, to taste

Instructions
 

Preparation

  • Add all ingredients to a blender or food processor.
  • Pulse until you reach your desired consistency. You can make it chunky or smooth — Tony likes it slightly chunky for texture.
  • Add salt to taste.
  • Chill the salsa for 1-2 hours or overnight to let the flavors come together.

Notes

Store in an airtight container in the refrigerator. Salsa can last up to a week, best enjoyed within the first few days. Always give it a good stir before serving.
