Main Ingredients

  • 2 tablespoons Extra Virgin Olive Oil For sautéing and flavor richness.
  • 2 cloves Garlic Fresh cloves for warmth and complexity.
  • 1 medium Yellow Onion Adds depth to the sauce.
  • 1 can Canned Whole Tomatoes Preferably San Marzano for their flavor.
  • to taste Salt Essential for flavor balance.
  • to taste Pepper Freshly cracked, for seasoning.
  • 1 bunch Fresh Basil Stir in before serving for freshness.
  • 1 tablespoon Dried Oregano For added flavor.

Optional Ingredients

  • 1/2 teaspoon Red Pepper Flakes For heat, adjust according to taste.
  • 1 teaspoon Sugar To cut acidity if desired.
  • 1 cup Chopped Mushrooms For added umami.

Preparation

  • Mince garlic and chop onion finely. Set aside.

Cooking

  • In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium heat.
  • Add minced garlic and chopped onion to the skillet. Stir frequently until fragrant and onions are translucent (about 3-4 minutes).
  • Pour in the canned whole tomatoes with their juices. Break them apart gently using a wooden spoon.
  • Sprinkle in salt, freshly cracked pepper, and herbs. If adding red pepper flakes, do this now.
  • Bring the sauce to a gentle simmer. Reduce the heat to low and let it bubble away for at least 30 minutes.
  • Before serving, stir in fresh basil and adjust seasoning if needed.

Notes

For a smoother sauce, blend it with an immersion blender before serving. Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
