  • 2 garlic cloves, minced

  • 2 cups vegetable broth
  • 1 cup heavy cream Can substitute with coconut milk for a lighter option.
  • 1 cup fresh basil leaves
  • Salt and pepper to taste

  • In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  • Stir in the minced garlic and cook for another minute.
  • Add the chopped tomatoes and vegetable broth, and bring to a boil.
  • Reduce heat and let it simmer for about 20 minutes.
  • Use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
  • Stir in the heavy cream and basil leaves.
  • Season with salt and pepper to taste.
  • Serve warm.

Notes

Serve with crusty bread or grilled cheese sandwiches for a classic pairing. A simple green salad with a light vinaigrette adds a refreshing touch. Drizzle some pesto on top for extra flavor. Store leftover soup in the fridge for up to five days or freeze for up to three months.
