  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/4 cup white sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup jam any flavor of your choice

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix together the flour, baking powder, and salt.
  • In another bowl, cream the softened butter, white sugar, and brown sugar until smooth.
  • Beat in the egg and vanilla extract.
  • Gradually add the flour mixture to the butter mixture until combined.
  • Roll the dough into small balls and place them on a baking sheet.
  • Make an indention in the center of each ball using your thumb or a spoon.
  • Fill each indentation with a small amount of jam.
  • Bake for 12-15 minutes or until lightly golden at the edges.
  • Let cool before serving.

Notes

Thumbprint Cookies can be paired with milk or tea and are great served alongside fruit salad or vanilla ice cream. Store them in an airtight container for up to a week or freeze for up to three months.
