Cookie Dough Ingredients

  • 200 g Cold unsalted butter Take the butter out of the fridge 30 minutes before you start baking so that it’s not completely solid
  • 180 g Light brown sugar
  • 80 g White caster sugar
  • 2 large Eggs at room temperature
  • 1 tsp Vanilla extract
  • 250 g Self-raising flour
  • 150 g Plain flour
  • 1 tsp Salt
  • 1 tsp Baking powder
  • 300 g Milk/white/dark chocolate chips or a mixture of all three

Instructions
 

Preparation

  • In a large bowl, combine the cold unsalted butter, light brown sugar, and white caster sugar. Mix until creamy.
  • Add the eggs and vanilla extract, and continue mixing until well combined.
  • Gradually add self-raising flour, plain flour, salt, and baking powder. Stir in chocolate chips until evenly distributed.

Shaping

  • Use your hands or a cookie scoop to form balls of dough.
  • Place them on a baking tray lined with parchment paper, leaving space between each cookie.

Baking

  • Preheat your oven to 180°C (350°F).
  • Bake the cookies for about 10-12 minutes, or until the edges are golden brown. The center may look slightly undercooked.

Notes

For best results, chill the dough for at least 30 minutes before baking. You can customize by adding nuts, dried fruit, or a sprinkle of sea salt on top before baking.
