Ingredients

For the Cake

  • 2 cups all-purpose flour Use almond flour for a gluten-free version.
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar Replace with coconut sugar for a less refined sweetener.
  • 0.5 cup unsalted butter (melted)
  • 1 cup ricotta cheese Essential for the authentic cannoli flavor.
  • 1 teaspoon vanilla extract
  • 1 zest of lemon
  • 0.5 cup semi-sweet chocolate chips

For the Frosting

  • 1 cup mascarpone cheese Can substitute with cream cheese for a tangier flavor.
  • 1 cup heavy whipping cream
  • 0.5 cup powdered sugar
  • 0.5 teaspoon vanilla extract

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In another bowl, beat the eggs and sugar until light and fluffy.
  • Stir in the melted butter, ricotta cheese, vanilla extract, and lemon zest.
  • Gradually add the dry ingredients and mix until just combined. Fold in the chocolate chips.

Baking

  • Pour the batter into the prepared pan and smooth the top with a spatula.
  • Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.

Making the Frosting

  • In a medium bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract.
  • Beat using a hand mixer until soft peaks form.

Assembly

  • Once the cake is completely cool, slice it in half horizontally.
  • Spread half of the frosting on the bottom layer, place the top layer over it, and cover the entire cake with the remaining frosting.
  • Chill for at least an hour before serving to set the frosting.

Notes

Ensure all ingredients are at room temperature for the best mixing results. Don't overmix the batter; gentle folding yields a lighter texture.
