For the Frosting

  • 1 cup mascarpone cheese Can substitute with cream cheese for tangier flavor.
  • 1 cup heavy whipping cream
  • 0.5 cup powdered sugar
  • 0.5 teaspoon vanilla extract

Instructions
 

Preparing the Cake Batter

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In another bowl, beat the eggs and sugar until light and fluffy.
  • Stir in the melted butter, ricotta cheese, vanilla extract, and lemon zest.
  • Gradually add the dry ingredients and mix until just combined. Fold in the chocolate chips.

Baking the Cake

  • Pour the batter into the prepared pan and smooth the top with a spatula.
  • Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.

Making the Frosting

  • In a medium bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract.
  • Beat using a hand mixer until soft peaks form.

Assembling the Cake

  • Once the cake is completely cool, slice it in half horizontally.
  • Spread half of the frosting on the bottom layer, place the top layer over it, and cover the entire cake with the remaining frosting.
  • Chill for at least an hour before serving to set the frosting.

For the best texture, ensure all ingredients are at room temperature. Avoid overmixing the batter to keep the cake light and fluffy.
