For the Cookies

  • 1 batch 5-Minute Hard Caramel Make according to preferred recipe.
  • 1.5 cups light brown sugar (packed) Ensure it's packed tightly.
  • 16 tablespoons unsalted butter (room temperature) Use room temperature for easy mixing.
  • 0.5 cup granulated sugar
  • 1.5 tablespoons real vanilla extract
  • 2 large eggs (room temperature)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 3.25 cups all-purpose flour
  • 1.5 cups dark chocolate (coarsely chopped or chips) Use high-quality dark chocolate.
  • to taste sea salt flakes for the tops (optional)

Instructions
 

For the Caramel

  • Make your 5-Minute Hard Caramel according to your favorite recipe or method. Set aside to cool.

For the Cookies

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the brown sugar, granulated sugar, and butter until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • Mix in the baking powder, baking soda, and sea salt.
  • Gradually add the flour and stir until just combined.
  • Fold in the dark chocolate.
  • Scoop out tablespoon-sized balls of dough onto baking sheets lined with parchment paper.
  • Press a small amount of cooled caramel into each cookie and top with a pinch of sea salt flakes (if desired).
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let cool for a few minutes before transferring to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze for up to three months, separating layers with parchment paper.
