  • 1/4 cup finely chopped red onion Soaked in cold water to soften its bite.
  • 1/2 cup mayonnaise Can be substituted with Greek yogurt.
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey Can be replaced with maple syrup.
  • Salt and pepper To taste.

Preparation

  • Prepare the broccoli by washing and cutting it into bite-sized florets. Ensure they are dry for better dressing adherence.
  • In a large bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  • Add the soaked red onion, sunflower seeds, and raisins to the dressing mixture; stir gently to combine.
  • Toss in the broccoli florets until well-coated with the dressing.
  • Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

Notes

For a light lunch, serve it alongside a slice of whole-grain bread. If you plan to enjoy it later, consider adding the dressing just before serving to maintain the crunchiness of the broccoli. Freezing is not recommended.
