  • 2 large large potatoes, peeled and diced
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 cup corn kernels
  • 1 cup shredded cheese
  • 1/2 cup diced onion
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté onions until translucent.
  3. Add ground beef and cook until browned. Stir in taco seasoning, diced tomatoes, and corn.
Assembly
  1. In a large casserole dish, layer the diced potatoes, then add the meat mixture over the top.
  2. Sprinkle shredded cheese on top of the casserole.
Baking
  1. Cover with foil and bake for 30-40 minutes, or until the potatoes are tender.
  2. Remove foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
Serving
  1. Let cool for a few minutes before serving.

Notes

Serve with a side of fresh guacamole and a crisp salad. For a fun experience, pair with tortilla chips and salsa. For extra spice, add jalapeños or hot sauce.
