  • 1 lb Ground beef Use lean ground beef for a healthier option.
  • 1 tbsp Taco seasoning Experiment with different taco seasonings.
  • 1 cup Bell peppers, diced Make sure not to overcook them for a nice crunch.
  • 1 cup Onion, diced Sauté until softened.
  • 1 can Black beans Rinse and drain before using.
  • 1 cup Rice Cook according to package directions.
  • 1 medium Avocado, sliced Top for added creaminess.
  • 1 bunch Fresh cilantro, chopped Use as garnish.

Preparation

  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning and a little water; simmer according to package instructions.
  • In a separate pot, cook rice according to package directions.
  • Dice bell peppers and onion, and sauté until softened.

Assembly

  • In bowls, layer rice, ground beef, sautéed veggies, and black beans.
  • Top with sliced avocado and fresh cilantro. Serve warm.

Notes

Taco Bowls can be served with a fresh green salad, tortilla chips, and salsa. Consider adding lime juice or hot sauce for a zing.
