  • 1 lb ground beef May be replaced with black beans for a vegetarian option.
  • 1 packet taco seasoning Adjust based on spice preference.
  • 2 cups refried beans
  • 2 cups diced tomatoes
  • 2 cups shredded cheese (cheddar and mozzarella)
  • 6 pieces corn tortillas For a crunchy texture, crispy corn tortillas can be used.
  • 1/2 cup salsa
  • 1/2 cup sour cream For garnish.
  • to taste Chopped green onions For garnish.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef until it's browned. Drain the excess fat.
  • Stir in the taco seasoning and diced tomatoes, and let it simmer for 5 minutes.
  • In a casserole dish, spread a layer of refried beans on the bottom.
  • Layer 2 tortillas on top of the beans.
  • Add half of the beef mixture, then half of the cheese.
  • Repeat the layers with the remaining tortillas, beef mixture, and cheese.
  • Pour salsa over the top.
  • Cover with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10 minutes until the cheese is bubbly.
  • Let it cool for a few minutes, then garnish with sour cream and green onions before serving.

Notes

This casserole is great as a main dish. Offer extra toppings like salsa, avocado, or jalapeños on the side. For storing, let the casserole cool completely and transfer it to an airtight container. It will stay fresh for about 3 to 4 days in the fridge and can be frozen for up to 2 months.
