  • 8 small flour tortillas
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 cup refried beans
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup sliced green onions
  • 1/4 cup diced green chilies (optional)
  • cooking oil for frying
Sauce Ingredients
  • 1/2 cup mayonnaise
  • 2 tablespoons diced pickled jalapeños
  • 1 tablespoon sugar
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder

Method
 

Preparation
  1. In a skillet, cook the ground beef over medium heat until browned. Drain the fat.
  2. Add taco seasoning mix and water, stir well, and let it simmer for 5 minutes.
  3. In another bowl, mix mayonnaise, diced jalapeños, sugar, cumin, paprika, and garlic powder to create the sauce.
Cooking
  1. In a frying pan, heat cooking oil over medium heat.
  2. Fry each tortilla for about 30 seconds on each side until crispy, then remove and place on paper towels to drain.
  3. Spread refried beans on one side of each tortilla. Layer with ground beef, diced tomatoes, cheese, black olives, green onions, and optional green chilies.
  4. Place another tortilla on top to create a pizza.
  5. Bake in a preheated oven at 350°F (175°C) for 10-15 minutes until the cheese is melted and bubbly.
  6. Cut into slices and serve with the sauce.

Notes

Serve with fresh side salad topped with avocado and lime dressing, crispy tortilla chips, salsa, sour cream, and guacamole for dipping. For extra crunch, add shredded lettuce after baking.
