  • 2 medium sweet potatoes
  • ½ cup breadcrumbs or almond flour Almond flour for a gluten-free option.
  • 1 each egg Optional for binding.
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • as needed Olive oil spray or brush-on oil for baking

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Peel and boil the sweet potatoes until they are just fork-tender, being careful not to overcook them. Let the potatoes cool after boiling.
  • Grate or mash the sweet potatoes in a bowl. Add the breadcrumbs, egg (if using), garlic powder, smoked paprika, and salt. Mix everything until well combined and shapeable.

Baking

  • Form the mixture into small tot shapes and place them on the prepared baking sheet.
  • Spray or brush the tots with olive oil and bake for 25-30 minutes, flipping them halfway through until they are crispy and golden.

Notes

For extra flavor, consider adding herbs like thyme or rosemary to the mixture. For a spicy kick, add a pinch of cayenne pepper or chili powder. Make sure to avoid overcooking the sweet potatoes; they should be just fork-tender for the best texture. For a crispy exterior, ensure each tot is spaced out on the baking sheet.
