Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, salt, pepper, and chili flakes until evenly coated.
Cooking
  1. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, flipping halfway through.
  2. While the sweet potatoes roast, toast the corn tortillas in a pan over medium heat for 1-2 minutes on each side.
Assembly
  1. Once the sweet potatoes are ready, assemble the tacos by placing them on the tortillas, adding avocado slices, feta cheese, cilantro, and a squeeze of lime.
  2. Serve warm with extra lime wedges.
