  • 2 medium sweet potatoes Peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 8 small corn or flour tortillas
  • 1/4 cup fresh cilantro Chopped for topping
  • 2 wedge lime For serving
  • 1/2 cup yogurt or sour cream For topping

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes. Toss with olive oil, cumin, chili powder, salt, and pepper.
  3. Spread in a single layer on a baking sheet and roast for 25-30 minutes until golden and crispy, flipping halfway.
Cooking
  1. Warm tortillas in a dry pan or microwave.
  2. Stuff tortillas with roasted sweet potatoes, top with cilantro, lime juice, and creamy topping. Serve immediately.

Notes

Sweet Potato Tacos can be paired with fresh avocado salad, black beans, or zesty salsa. For leftovers, store sweet potatoes separately from tortillas in an airtight container in the fridge for 3-4 days.
