Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar for the batter
  • 1 teaspoon cinnamon for the glaze
  • Additional tablespoon sugar for glaze
Wet Ingredients
  • 2 cups sweet potato puree freshly made for richer flavor
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C). Grease a baking dish with some of the melted butter.
  2. In a bowl, combine the sweet potato puree, melted butter, milk, and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, salt, and sugar.
  4. Pour the dry ingredients into the wet ingredients and stir until just combined.
  5. Pour the batter into the greased baking dish.
Baking
  1. Bake for about 20-25 minutes or until golden brown.
  2. Mix sugar and cinnamon together for the glaze and sprinkle on top of the biscuits after they come out of the oven.
  3. Allow to cool for a few minutes before serving.

Notes

Store in an airtight container in the refrigerator for up to three days. For freezing, place baked biscuits in a single layer on a baking sheet, then transfer to a freezer-safe bag for up to three months. Warm them in the oven for a few minutes before serving.
