Preparation
- Preheat the oven to 425°F (220°C). Grease a baking dish with some of the melted butter.
- In a bowl, combine the sweet potato puree, melted butter, milk, and vanilla extract.
- In another bowl, whisk together flour, baking powder, salt, and sugar.
- Pour the dry ingredients into the wet ingredients and stir until just combined.
- Pour the batter into the greased baking dish.
Baking
- Bake for about 20-25 minutes or until golden brown.
- Mix sugar and cinnamon together for the glaze and sprinkle on top of the biscuits after they come out of the oven.
- Allow to cool for a few minutes before serving.
Notes
Store in an airtight container in the refrigerator for up to three days. For freezing, place baked biscuits in a single layer on a baking sheet, then transfer to a freezer-safe bag for up to three months. Warm them in the oven for a few minutes before serving.
