Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • Zest of 1 lemon
Wet Ingredients
  • 1/2 cup cold unsalted butter, cubed Use cold butter for best texture.
  • 2/3 cup heavy cream Can substitute with whole milk or a dairy-free alternative.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Mix the flour, sugar, baking powder, salt, and lemon zest in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream and egg until just combined.
  5. Turn out the dough onto a floured surface and knead gently about 2-3 times.
  6. Roll out to about 1 inch thick, then cut into your preferred shapes.
  7. Place the scones on a baking sheet and bake for 15-20 minutes, or until golden brown.
  8. Cool slightly before glazing with warm lemon glaze.

Notes

Serve with clotted cream or fruit preserves. Pairs well with tea or coffee. Store in an airtight container at room temperature for up to 2 days, or freeze unglazed for up to a month.
