Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine almond flour, coconut sugar or monk fruit sweetener, and baking powder. Mix well.
  • Create a well in the center and add eggs, unsweetened almond milk, and melted butter or coconut oil. Stir until a dough forms.
  • On a parchment-lined surface, gently knead the dough a few times. Roll it into a rectangle about ½-inch thick.
  • Melt 2 tablespoons of butter (or coconut oil) and brush it across the rectangle. Sprinkle cinnamon and coconut sugar evenly over the top.
  • Starting from one of the long sides, carefully roll the dough into a log. Slice the log into 1-inch pieces.

Baking

  • Place the pieces in a greased baking pan, ensuring they are close but not squished.
  • Bake for about 20-25 minutes until golden brown and fluffy.
  • While the rolls bake, whisk together powdered monk fruit sweetener and almond milk to create a simple glaze.
  • After baking, drizzle the glaze over the warm rolls.
