  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened Make sure it's softened but not melted.
  • 1 1/2 cups white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon salt
  • to taste Royal icing For decoration.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, stir together the flour, baking soda, and baking powder until well combined.
  3. In a separate mixing bowl, cream together the softened butter and sugar until the mixture is smooth.
  4. Beat in the egg followed by the vanilla and almond extracts, mixing well.
  5. Gradually blend the dry ingredient mixture into the wet mixture until combined.
  6. Roll rounded teaspoonfuls of dough into balls and place them onto ungreased cookie sheets.
  7. Flatten each ball gently with the bottom of a glass.
  8. Bake in the preheated oven for 8 to 10 minutes or until they turn golden.
  9. Allow the cookies to cool completely before decorating with royal icing.

Notes

Best enjoyed with milk or a warm beverage. Store in an airtight container at room temperature for about a week, or freeze them for longer storage.
