  • 1 pound ground beef
  • 2 pieces bell peppers, chopped
  • 1 piece onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 15 oz can low sodium beef broth
  • 1 15 oz can diced tomatoes
  • 1 cup uncooked long grain white rice

Cooking

  • In a large skillet, cook the ground beef over medium heat until browned.
  • Add in the chopped bell peppers, onion, and garlic, cooking until the vegetables are softened.
  • Stir in Worcestershire sauce, beef broth, diced tomatoes, and rice.
  • Bring to a boil, then reduce heat, cover, and let simmer for 20-25 minutes, or until the rice is cooked through.
  • Serve hot.

Notes

Pairs perfectly with a fresh green salad or steamed vegetables. For a little extra kick, drizzle some hot sauce or serve with a dollop of sour cream on top. Can be stored in an airtight container in the fridge for up to three days or frozen for about two months.
