  • 1 pound ground beef or turkey Ground turkey is a healthier alternative.
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped Can substitute with red or yellow bell pepper.
  • 2 cups cooked rice Brown rice can be used for a healthier option.
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon garlic powder Fresh garlic can also be used.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • as desired Shredded cheese for topping Optional; for a spicy kick, use pepper jack.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef or turkey with the chopped onion and green bell pepper until the meat is no longer pink.
  3. Stir in the cooked rice, diced tomatoes, tomato sauce, garlic powder, Italian seasoning, salt, and pepper until everything is well combined.
Baking
  1. Transfer the mixture into a greased baking dish.
  2. If you’d like, sprinkle shredded cheese on top for that gooey finish.
  3. Bake for 25-30 minutes, or until heated through and bubbling, and the cheese is melted.

  1. Serve warm and enjoy every bite!

Notes

Store uneaten casserole in an airtight container in your refrigerator for up to 3-4 days. Suitable for freezing up to 3 months. Reheat at 350°F until warmed through.
