Ingredients
  

For Cream Cheese Strawberry Pie

  • 1 pie crust 1 store-bought pie crust or homemade pie crust Use any preferred type of pie crust.
  • 1/2 cup 1/2 cup cold water Cold water for dissolving gelatin.
  • 2 1/4 teaspoons 2 1/4 teaspoons unflavored gelatin (Knox brand) Used for setting the creamy filling.
  • 1 cup 1 cup heavy whipping cream Whipped for the creamy filling.
  • 12 ounces 12 ounces cream cheese, softened Cream cheese should be softened for easy mixing.
  • 2 cups 2 cups powdered sugar For sweetness in the creamy filling.
  • 2 teaspoons 2 teaspoons vanilla extract Adds flavor to the filling.
  • 1 pound 1 pound fresh strawberries, sliced For topping the cream cheese pie.
  • 1/2 cup 1/2 cup seedless strawberry jam For the topping glaze.
  • 2 tablespoons 2 tablespoons cold water To help dissolve the gelatin in the jam.

For Fresh Strawberry Pie

  • 1 unbaked rolled pie crust 1 unbaked rolled pie crust Use your choice of pie crust.
  • 1 egg white 1 egg white, beaten For brushing the pie crust.
  • 3/4 cup 3/4 cup water For the filling mixture.
  • 1/2 cup 1/2 cup granulated sugar Adds sweetness to the filling.
  • 3 1/2 tablespoons 3 1/2 tablespoons cornstarch Used to thicken the filling.
  • 3 ounces 3 ounces strawberry gelatin mix For additional flavor and setting.
  • 1 1/2 pounds 1 1/2 pounds fresh strawberries, washed, dried, hulled, and halved Fresh strawberries for the pie.
  • Whipped topping (optional garnish) Optional for serving.

Instructions
 

For Cream Cheese Strawberry Pie

  • Prepare your pie crust according to the package directions or bake it if making from scratch.
  • In a small bowl, mix 1/2 cup cold water and the gelatin together. Stir until the gelatin is dissolved.
  • In another bowl, whip the heavy cream until soft peaks form.
  • In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla until smooth.
  • Gradually add the gelatin mixture to the cream cheese mix, and then gently fold in the whipped cream.
  • Pour this creamy filling into your pie crust and place it in the fridge to set.
  • For the topping, heat the jam with 2 tablespoons of cold water and the dissolved gelatin until it’s smooth.
  • Mix the sliced strawberries with the jam and pour this over the pie.
  • Chill until ready to serve.

For Fresh Strawberry Pie

  • Preheat your oven and prepare the rolled pie crust by brushing it with beaten egg white, then bake it according to the package directions.
  • In a medium saucepan, combine the water, granulated sugar, and cornstarch. Cook this mixture until it thickens.
  • Stir in the strawberry gelatin mix until well combined.
  • Gently fold in your halved strawberries.
  • Pour this mixture into the baked pie crust and let it cool to set.
  • If you like, add whipped topping before serving.

Notes

Use fresh strawberries for the best flavor. Adjust the sweetness to your taste by adding more or less sugar. Make the pies a day ahead of serving for even better flavor.
