Ingredients
  

For the pudding
  • 3 cups Strawberries, halved Use fresh strawberries at peak ripeness.
  • 2 tablespoons Gelatin Ensure fully dissolved to avoid lumps.
  • 1 cup Sugar
  • 2 tablespoons Lemon juice
  • 3 cups Water Divided into warm and cold.
For garnish
  • 1 handful Mint leaves For garnish.

Method
 

Preparation
  1. Lightly grease your mold with neutral oil if you plan to unmold the pudding.
  2. In a saucepan, heat half of the water with sugar and lemon juice until dissolved.
  3. Sprinkle gelatin over the remaining cold water and let it bloom for 5 minutes.
  4. Add the bloomed gelatin to the warm mixture and whisk until fully dissolved.
  5. Allow the jelly to cool slightly, stir in the strawberries, then pour into your prepared mold.
  6. Chill in the refrigerator for 4 to 6 hours until completely set.
  7. Run a thin knife around the edges and unmold gently onto a serving plate.
  8. Garnish with mint leaves and serve chilled.

Notes

For best results, consider adding a splash of your favorite liqueur for an adult twist. Store leftover pudding covered in the refrigerator for up to three days, or freeze for up to a month.
