  • 1 sheet puff pastry Thawed if frozen.
  • 1 cup crumbled feta cheese Experiment with different cheeses for variations.
  • 1 tbsp fresh thyme leaves Can substitute with other herbs.
  • 2 tbsp honey Drizzle on warm tart for extra shine.
  • 1 whole lemon (zest and juice) Adds a bright flavor to the strawberries.
  • 1 whole beaten egg For egg wash on pastry edges.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. Toss the sliced strawberries with honey, lemon zest, and lemon juice.
  3. Place the puff pastry on the baking tray and lightly score a 1-inch border around the edges.
Assembly
  1. Arrange the strawberries inside the border, sprinkle with feta, and scatter fresh thyme leaves on top.
  2. Brush the edges with the beaten egg.
Baking
  1. Bake for 25–30 minutes until golden and puffed.
  2. Drizzle with a little extra honey while warm for added shine.
Serving
  1. Slice and serve warm or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to three days. You can freeze the unbaked tart wrapped in plastic wrap and foil for up to two months.
