Preparation

- Toss the sliced strawberries with honey, lemon zest, and lemon juice.
- Place the puff pastry on the baking tray and lightly score a 1-inch border around the edges.
Assembly
- Arrange the strawberries inside the border, sprinkle with feta, and scatter fresh thyme leaves on top.
- Brush the edges with the beaten egg.
Baking
- Bake for 25–30 minutes until golden and puffed.
- Drizzle with a little extra honey while warm for added shine.
Serving
- Slice and serve warm or at room temperature.
