Preparation
- Preheat oven to 375°F (190°C) and line a baking tray with parchment paper.
- Toss sliced strawberries with honey, lemon zest, and lemon juice.
- Place puff pastry on the baking tray and lightly score a 1-inch border around the edges.
- Arrange strawberries inside the border, sprinkle with feta, and scatter fresh thyme leaves.
- Brush edges with egg wash.
Cooking
- Bake for 25–30 minutes until golden and puffed.
- Drizzle with a little extra honey while warm for added shine.
Serving
- Slice and serve warm or at room temperature, optionally paired with a fresh arugula salad or dessert toppings.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes.
