  • 1 whole lemon (zest and juice) Adds a citrus kick

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. Toss sliced strawberries with honey, lemon zest, and lemon juice.
  3. Place puff pastry on the baking tray and lightly score a 1-inch border around the edges.
  4. Arrange strawberries inside the border, sprinkle with feta, and scatter fresh thyme leaves.
  5. Brush edges with egg wash.
Cooking
  1. Bake for 25–30 minutes until golden and puffed.
  2. Drizzle with a little extra honey while warm for added shine.
Serving
  1. Slice and serve warm or at room temperature, optionally paired with a fresh arugula salad or dessert toppings.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes.
