Preparation
- Preheat oven to 375°F (190°C) and line a baking tray with parchment paper.
- Toss sliced strawberries with honey, lemon zest, and lemon juice.
- Place puff pastry on the baking tray and lightly score a 1 inch border around the edges.
- Arrange strawberries inside the border, sprinkle with feta, and scatter fresh thyme leaves.
- Brush edges with egg wash and bake for 25–30 minutes until golden and puffed.
- Drizzle with a little extra honey while warm for added shine.
- Slice and serve warm or at room temperature.
Notes
You can serve the tart with a light green salad, alongside vanilla ice cream for dessert, or with sparkling wine for special occasions. To store, cover with plastic wrap or aluminum foil and refrigerate for up to three days. Reheat in the oven if needed.
