Ingredients
  

For the Cake

  • 1 box strawberry cake mix (plus ingredients listed on the box) Follow package instructions for additional ingredients.

For the Cheesecake

  • 16 oz cream cheese, softened Ensure cream cheese is well-softened to avoid lumps.
  • 1 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Crunch Topping

  • 1 cup crushed Golden Oreos
  • 2 tablespoons strawberry gelatin powder (Jell-O mix)
  • 2 tablespoons unsalted butter, melted

For Assembly

  • Fresh strawberries, sliced
  • Strawberry sauce (store-bought or homemade) Homemade adds freshness and can be customized.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and line two 9-inch round cake pans.
  • Prepare the cake mix according to package instructions and divide the batter between the pans. Bake as directed and let the cakes cool completely.
  • Reduce the oven temperature to 325°F (163°C) and grease and line a 9-inch springform pan.
  • In a bowl, beat the cream cheese and sugar until smooth. Add sour cream, eggs, and vanilla extract; mix until combined.

Baking

  • Pour the cheesecake batter into the springform pan and bake for 45-50 minutes, or until the center is set. Cool and refrigerate for at least 4 hours or overnight.

Topping

  • In a bowl, mix crushed Golden Oreos, strawberry gelatin powder, and melted butter until evenly coated for the crunch topping.

Assembly

  • Assemble by placing one strawberry cake layer on a plate, spreading frosting on top if desired, and adding the cheesecake layer, then topping it with the second cake layer.
  • Optionally frost the outside of the cake and press the crunch topping onto the sides and top.

Garnishing

  • Garnish with sliced strawberries and drizzle with strawberry sauce. Serve and enjoy!

Notes

Store leftover cheesecake in an airtight container in the refrigerator for about 3-4 days. Can freeze individual slices wrapped in plastic wrap.
