Ingredients
  

For the Tart Crust

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter (cold, cubed) Ensure the butter is cold for a flaky crust.
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2-3 tbsp cold water

For the Cream Filling

  • 1 cup heavy whipping cream
  • 1 cup cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Toppings

  • Fresh strawberries halved For topping.
  • 2 tbsp strawberry jam Optional, for glaze.
  • Fresh mint leaves For garnish.

Instructions
 

Preparation of the Tart Crust

  • In a bowl, mix flour and sugar.
  • Add cold, cubed butter and rub in until crumbly.
  • Add egg yolk and cold water to form a dough.

Chilling

  • Wrap dough in plastic and chill for 30 minutes.

Baking the Crust

  • Preheat oven to 350°F (175°C).
  • Roll out the chilled dough and press it into tartlet pans.
  • Prick the bottoms with a fork.
  • Bake crusts for 12–15 minutes or until golden. Let cool.

Preparing the Filling

  • In a bowl, beat cream cheese until smooth.
  • Add powdered sugar and vanilla extract.
  • In another bowl, whip the cream to stiff peaks.
  • Fold whipped cream into the cream cheese mixture.

Assembling the Tartlets

  • Fill each tart shell with the cream filling.
  • Top with halved strawberries.
  • For a shiny look, warm the strawberry jam slightly and brush over strawberries.

Garnishing and Serving

  • Garnish with fresh mint leaves.
  • Serve chilled.

Notes

Store leftovers in an airtight container in the refrigerator. Best enjoyed within a couple of days.
