Ingredients
  

For the cookies

  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 box strawberry cake mix
  • 2 teaspoons baking powder
  • 1/2 cup strawberries, chopped Fresh strawberries

For the cream cheese frosting

  • 8 ounces cream cheese, softened At room temperature
  • 4 tablespoons unsalted butter, softened At room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups powdered sugar
  • 6 strawberries for topping Fresh strawberries for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the eggs and vegetable oil.
  • Add the strawberry cake mix and baking powder. Stir until fully combined.
  • Gently fold in the chopped strawberries.
  • Drop spoonfuls of the dough onto a lined baking sheet.
  • Bake for 12-15 minutes, or until the edges are lightly golden.

Frosting

  • While the cookies cool, prepare the cream cheese frosting. Beat together the cream cheese, unsalted butter, vanilla extract, and powdered sugar until smooth and fluffy.
  • Once the cookies are completely cooled, spread the cream cheese frosting on top of each cookie.
  • Garnish with fresh strawberries.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Bring to room temperature before serving.
