For the Cookies

  • 2 large large eggs
  • 1/4 cup vegetable oil
  • 1 box strawberry cake mix
  • 2 teaspoons baking powder
  • 1/2 cup strawberries, chopped

For the Cream Cheese Frosting

  • 8 ounces cream cheese Make sure it's at room temperature.
  • 4 tablespoons unsalted butter Make sure it's at room temperature.
  • 1 teaspoon vanilla extract
  • 2 1/2 cups powdered sugar Gradually mix in until creamy.
  • 6 strawberries (for topping)

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the eggs and vegetable oil.
  • Add the strawberry cake mix and baking powder to the mixture, and stir until combined.
  • Fold in the chopped strawberries.
  • Drop spoonfuls of the cookie dough onto a lined baking sheet.
  • Bake for 10-12 minutes or until the edges are lightly golden.

Making the Frosting

  • Beat together the cream cheese and unsalted butter until smooth.
  • Add the vanilla extract and gradually mix in the powdered sugar until creamy.

Finishing Touch

  • Spread the frosting over the cooled cookies and garnish with fresh strawberries on top.
  • Serve and enjoy your sweet treat!

Notes

Store the cookies in an airtight container in the refrigerator. They will stay fresh for about 3-5 days. Consider freezing the cookies without frosting and add the cream cheese frosting just before serving. Make sure your butter and cream cheese are at room temperature for smooth frosting. For extra flavor, try adding a splash of lemon juice to the frosting.
